Crockpot Bruschetta

- 3 Medium tomatoes, cored, seeded, diced shopping list
- 1 celery Stalk, trimmed and chopped shopping list
- 1 shallot, chopped shopping list
- 2 pepperoncini peppers, chopped shopping list
- 1 tsp tomato paste shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp Pepper shopping list
- 1 T olive oil shopping list
- 4-6 Slices Italian bread, or any round bread will do shopping list
- 1 clove Garlic shopping list
How to make it
- In Crockpot, add tomatoes (drain off juice as much as possible)
- Add celery, shallots, pepperoncini, tomato paste, salt pepper and oil
- Cover and Cook on LOW 1 hour
- Put sliced bread rounds in oven at 300 until lightly toasted
- When bread is toasted, immediately rub each slice with garlic
- Spread tomato topping on bread and Serve.
- (I serve the bread and the tomato mixture separately for parties so the mixture stays warm to eat.)
- Note: Pepperoncini peppers can be found fresh in produce section or in the grocery store aisle with pickles,etc usually have them whole or sliced in a jar . Also known as 'banana peppers'.
