How to make it

  • Melt the butter in a large sauce pan
  • add the onions and saute for about 3 min
  • stir in the flour and cook for 1 minute while stirring (low heat)
  • add the milk and bring to a simmer stirring frequently (low heat)
  • add the uncooked elbows and cover
  • let cook for about 8-9 minutes over low heat - stir occasionally
  • remove from heat and stir in the Fontina and Parmesan cheese
  • mix well
  • cover and let stand for a couple of minutes-until the cheese is melted-and serve
