Seafood Casserole Recipe
This dish is one my mother-in-law made and I feel in love with it. It is very light and delicious.

Ingredients
  • 2 (4 1/4 oz) cans of baby shrimp
  • 1 (6 oz) can crabmeat (or pink salmon)
  • 1 (6 oz) can tuna
  • 2 1/2 cups cooked vermicelli
  • 2 egg whites lightly beaten
  • 1/2 cup light mayonaise (I use Dukes light)
  • 1/2 cup light sour cream
  • 1 can tomato soup
  • 1/2 onion diced
  • 1/2 medium size green pepper diced
  • Bread crumbs
  • 1/4 cup melted butter

Directions
  1. Break vermicelli before cooking and cook a few minutes less than package directions and drain.
  2. Drain all seafood and check for bone or shell.
  3. Combine ingredients except bread crumbs and butter into a lightly sprayed (pam) 9 inch square dish.
  4. Bake at 350 degrees for 30 minutes then top with bread crumbs and pour butter over them.
  5. Bake an additional 15 minutes.
  6. Leftovers can be frozen.
