Crusted Baked Pork Chops

- 2 thick cut boneless pork chops, well trimmed shopping list
- About 1 hearty cereal bowl of frosted Shredded Wheat, crushed shopping list
- 1 small onion, finely diced (optional - my wife doesn't like it) shopping list
- 1 can of peeled whole tomatoes shopping list
- Dry ground mustard shopping list
- brown sugar shopping list
- salt and pepper shopping list
- worcestershire sauce shopping list
- olive oil for searing shopping list
How to make it
- Preheat the oven to 350 degrees
- Heat enough olive oil to cover your skillet about 1/4 inch over medium heat
- Add diced onion, if you so choose
- Rinse the chops under cold water and LIBERALLY coat with crushed cereal
- Brown chops in the olive oil (and onions if you are using them) on both sides, about 5 minutes each side
- Transfer chops to a "greased" (read: Pam type sprayed) baking dish
- Sprinkle the dry seasonings, including sugar, and worcestershire sauce over the chops to taste
- Place whole tomatoes on the chops to cover them (I also hand crush them over the chops)
- Cover with aluminum foil and bake for 1 hour
- Uncover and bake for another 20 minues or so
