How to make it

  • Preheat the oven to 350 degrees
  • Heat enough olive oil to cover your skillet about 1/4 inch over medium heat
  • Add diced onion, if you so choose
  • Rinse the chops under cold water and LIBERALLY coat with crushed cereal
  • Brown chops in the olive oil (and onions if you are using them) on both sides, about 5 minutes each side
  • Transfer chops to a "greased" (read: Pam type sprayed) baking dish
  • Sprinkle the dry seasonings, including sugar, and worcestershire sauce over the chops to taste
  • Place whole tomatoes on the chops to cover them (I also hand crush them over the chops)
  • Cover with aluminum foil and bake for 1 hour
  • Uncover and bake for another 20 minues or so

    Make sure you stick to the maximum of 20 minutes in the oven uncovered. I made this last night and remembered it at about 25 minutes. Still was good, but was definitely extra crispy. The cereal coating got rather dark, but that was about the worst of it.

    For the cereal coating, I cover both sides as best as possible, then "scoop" a thicker layer on the top, bring it to the pan, and flip it right in the pan (with the thicker layer now down in the oil). I then add more to the top side now showing for when I flip them over. The cereal sears/browns to the chop quite nicely.
