This reminds me of summers as a kid, a slice of watermelon and a shaker of salt. Great refreshing snack. Ahhhh.... to be a child again. And it's ready, and gone, in a jiffy.

Ingredients
  • 4 slices watermelon, chilled
  • 4-1/2 oz feta cheese (original recipe call for sheep's milk feta, if you can find it) cut into bite size pieces.
  • Sunflower seeds/Pumpkin seeds lightly toasted - handful of these.
  • 10 - 15 kalamata or dry-cured black olives.
  • Optional: dried dates or apricots

Directions
  1. Cut rind off the watermelon and remove as many seeds as possible. You want the "meat" of the melon away from any of the whiter flesh.
  2. Cut water melon into triangular chucks.
  3. Mix the watermelon, feta cheese, mixed seeds, and black olives.
  4. Cover and chill salad for 30 minutes.
  5. Bon Appetite.
