How to make it

  • Slowly mix dry ingredients with water and oil
  • Beat at medium speed for 3 to 4 minutes
  • Add egg yolks one at a time
  • Add half of the bag of strawberries (you can use fresh strawberries chopped)
  • Fold in stiffly beaten egg whites
  • Bake in 3 greased and floured 9 inch cake pans for 35 to 40 minutes at 325 degrees
  • Icing:
  • Mix and beat ingredients together until smoooth
  • Ice cooled cake between each layer and on top

    I have made this cake twice now, using fresh strawberries. The first time I made it I took it to a potluck picnic, and it went so fast I only got to sample the crumbs! I made it again for a friend's birthday, and it was truly a memorable cake and worth every bit of effort!

    NOTICE: Cake mix sizes have changed, and the cake mix I used was only 15.25 ounces. To compensate for this, I bought 2 boxes of Duncan Hines white cake mix. I added the difference from the 2nd box (2/3 cup) to make up the 18.5 oz. If you have a 16.5 ounce cake mix, you will need to add 1/3 cup extra mix.

    I could not find frozen unsweetened coconut at my grocer's, so I used bagged unsweetened coconut. It seemed a little dry, so I measured out my coconut into a baggie and sprinkled a little water over it, and that moistened it right up.

    I added 1/2 cup of chopped pecans to the cake and another 1/2 cup to the frosting. The frosting was a little runny, so I added extra powdered sugar until the consistency was right.

    This looks good. I had to giggle because it's called fresh strawberry cake yet it uses frozen strawberries. Also, for those who may not know when you separate the yolks from the whites... Dont toss the whites!. The recipe doesnt say that other than to beat the whites. Probably should say 4 eggs, separated...Just thought I would add for those who dont bake much :)Going to try this one soon!
