This is a sort of guessipe; The potato cakes may also be eaten for breakfast with eggs and ham or bacon. But this is more like a New York Bagel with cream cheese and smoked salmon. Make ahead potato cakes will work also.

Ingredients
  • 8 med. boiling potatoes
  • oil/butter
  • salt
  • pepper
  • 1 purple onion sliced very thin in circles
  • 2 pkgs smoked salmon
  • 1 package full fat cream cheese softened

Directions
  1. Wash, peel and boil potatoes
  2. remove from pan leaving hot pan on stove
  3. put potatoes back in hot pan for one minute (heat off) to remove moisture
  4. rice the potatoes mix with
  5. 2 tblsp flour
  6. bit of milk
  7. salt/pepper
  8. mix together and turn out on lightly floured cutting board (should be like a dough but taste like potatoes)
  9. pat down to 1/2 to 3/4 inch thick
  10. slice in triangles and make sure you turn over to have flour on both sides
  11. heat skillet and fry potato crusty but soft in middle
  12. ------------------------
  13. plate;
  14. on platter place potato cakes
  15. spread each with a nice layer of cream cheese
  16. top with a twirled slice of smoked salmon
  17. and a few slices onion
  18. garnish with parsley or cilantro
  19. mangia bene!
