How to make it

  • Wash, peel and boil potatoes
  • remove from pan leaving hot pan on stove
  • put potatoes back in hot pan for one minute (heat off) to remove moisture
  • rice the potatoes mix with
  • 2 tblsp flour
  • bit of milk
  • salt/pepper
  • mix together and turn out on lightly floured cutting board (should be like a dough but taste like potatoes)
  • pat down to 1/2 to 3/4 inch thick
  • slice in triangles and make sure you turn over to have flour on both sides
  • heat skillet and fry potato crusty but soft in middle
  • ------------------------
  • plate;
  • on platter place potato cakes
  • spread each with a nice layer of cream cheese
  • top with a twirled slice of smoked salmon
  • and a few slices onion
  • garnish with parsley or cilantro
  • mangia bene!
