Chili Cheese Cornbread Recipe
Awesome zesty cornbread to serve with soup or a nice big bowl of Texas Chili!

Ingredients
  • 1 cup flour
  • 1 cup yellow cornmeal
  • 1 cup Cheddar cheese, shredded
  • 1 cup frozen corn, thawed and drained
  • 1/4 cup shortening
  • 1 cup milk
  • 1 tablespoon sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 can (4 oz) chopped green chilies, drained
  • 1 egg

Directions
  1. Heat oven to 425 degrees.
  2. Grease a 9x9 inch square pan.
  3. Mix all ingredients until moistened, mixing well. Beat vigorously 30 seconds, then pour into pan.
  4. Bake 20 to 25 minutes til golden brown.

I make a similar version using a small can of sweet corn. I then make muffins! You are so right. It's wonderful with a bowl of chili or soup. The best part is the melted cheese and chilies!
