  • Blend all ingredients until very smooth. I use a blender. Doing it by hand doesn't seem to get it smooth enough. If the mixutre is thick add more water

    It is absolutely imperative that you do *not* blend tempura smooth. Its best to stir/fold no more than 5 or 6 times, and just walk away. Lumpy=good when it comes to batter.

    Also, whatever size batch you make, and whether or not you use water/beer/sodawater, make sure your flour to liquid ratio is 1:1.
