Tortellini And Spinach In Garlic Broth

- 2 T olive oil shopping list
- 5 garlic cloves, minced shopping list
- 3 C water shopping list
- 3 C Home-made chicken stock or canned low sodium chicken broth shopping list
- 1 1/2 t salt shopping list
- 1 lb. fresh or frozen cheese tortellini shopping list
- 1 lb. spinach leaves, stems removed, washed well shopping list
- Grated parmesan cheese for garnish shopping list
How to make it
- In a large pot, heat oil over moderately low heat. Add garlic and cook, stirring, for 1 minute.
- Add water, broth and salt and bring to a boil. Reduce heat and simmer, covered for 10 minutes.
- Meanwhile, in a large pot of boiling, salted water, cook tortellini until just done, about 4 minutes for fresh or 12 minutes for frozen, and drain. (Don't cook tortellini in the soup. It will soak up too much of the broth.)
- Add spinach and cook until just wilted, about 1 minute. Stir in tortellini at the last moment. Ladle into bowls.
- Garnish with parmesan cheese.
