How to make it

  • In a large pot, heat oil over moderately low heat. Add garlic and cook, stirring, for 1 minute.
  • Add water, broth and salt and bring to a boil. Reduce heat and simmer, covered for 10 minutes.
  • Meanwhile, in a large pot of boiling, salted water, cook tortellini until just done, about 4 minutes for fresh or 12 minutes for frozen, and drain. (Don't cook tortellini in the soup. It will soak up too much of the broth.)
  • Add spinach and cook until just wilted, about 1 minute. Stir in tortellini at the last moment. Ladle into bowls.
  • Garnish with parmesan cheese.
