Ingredients
  • 2 T Olive Oil
  • 5 Garlic Cloves, minced
  • 3 C Water
  • 3 C Home-made Chicken Stock or canned low sodium Chicken Broth
  • 1 1/2 t Salt
  • 1 lb. fresh or frozen Cheese Tortellini
  • 1 lb. Spinach Leaves, stems removed, washed well
  • Grated Parmesan Cheese for garnish

Directions
  1. In a large pot, heat oil over moderately low heat. Add garlic and cook, stirring, for 1 minute.
  2. Add water, broth and salt and bring to a boil. Reduce heat and simmer, covered for 10 minutes.
  3. Meanwhile, in a large pot of boiling, salted water, cook tortellini until just done, about 4 minutes for fresh or 12 minutes for frozen, and drain. (Don't cook tortellini in the soup. It will soak up too much of the broth.)
  4. Add spinach and cook until just wilted, about 1 minute. Stir in tortellini at the last moment. Ladle into bowls.
  5. Garnish with parmesan cheese.
