This soup is a quick and easy prep for a slow cooking crock pot and goes great with your favorite bread for dipping! Spices and veggies can be altered to suit your desires!

Ingredients
  • 1lb small red potatoes
  • 4 medium carrots
  • 1 medium onion
  • 1 medium stalk celery
  • 2 cans of kidney beans
  • 2 cans chicken broth
  • 1 tsp dried thyme leaves
  • 1/2 tsp seasoned salt
  • 1lb pre-cooked smoked sausage
  • 2 tbs chopped fresh parsley

Directions
  1. Cut potatoes into 8 pieces (about 3 cups)
  2. Slice carrots (2 cups)
  3. Chop the onion
  4. Slice the celery
  5. Drain and rinse the kidney beans
  6. Cut sausage in half lengthwise, then into small bite-sized pieces
  7. Spray a 3 to 4 quart slow cooker with cooking spray or olive oil
  8. Mix all ingredients in the pot except the sausage and parsley and cook on the low-heat setting for 8 hours
  9. Add any other seasoning desired (salt, pepper, basil, garlic salt) in the beginning of the batch
  10. Stir in the sausage and parsley and cook for another 30 minutes (or until the sausage is hot)
