Smoked Sausage and Bean Soup

- 1lb small red potatoes shopping list
- 4 medium carrots shopping list
- 1 medium onion shopping list
- 1 medium stalk celery shopping list
- 2 cans of kidney beans shopping list
- 2 cans chicken broth shopping list
- 1 tsp dried thyme leaves shopping list
- 1/2 tsp seasoned salt shopping list
- 1lb pre-cooked smoked sausage shopping list
- 2 tbs chopped fresh parsley shopping list
How to make it
- Cut potatoes into 8 pieces (about 3 cups)
- Slice carrots (2 cups)
- Chop the onion
- Slice the celery
- Drain and rinse the kidney beans
- Cut sausage in half lengthwise, then into small bite-sized pieces
- Spray a 3 to 4 quart slow cooker with cooking spray or olive oil
- Mix all ingredients in the pot except the sausage and parsley and cook on the low-heat setting for 8 hours
- Add any other seasoning desired (salt, pepper, basil, garlic salt) in the beginning of the batch
- Stir in the sausage and parsley and cook for another 30 minutes (or until the sausage is hot)
