How to make it

  • Cut potatoes into 8 pieces (about 3 cups)
  • Slice carrots (2 cups)
  • Chop the onion
  • Slice the celery
  • Drain and rinse the kidney beans
  • Cut sausage in half lengthwise, then into small bite-sized pieces
  • Spray a 3 to 4 quart slow cooker with cooking spray or olive oil
  • Mix all ingredients in the pot except the sausage and parsley and cook on the low-heat setting for 8 hours
  • Add any other seasoning desired (salt, pepper, basil, garlic salt) in the beginning of the batch
  • Stir in the sausage and parsley and cook for another 30 minutes (or until the sausage is hot)
