Ingredients

1 large or 2 medium potatoes, peeled and cubed

2 medium carrots, sliced

1 medium onion, chopped in large chunks

1 celery rib, sliced

1/2 cup frozen peas, thawed

1-1/2 to 2 cups cooked chicken, cubed

*Rotisserie is another time saver

1 (10.75 ounce) can condensed cream of chicken soup, undiluted

*I like to dilute the chicken soup with 1/2 a soup can of White Wine

Pastry for a 9 inch single crust pie

*I sometimes add a handful of sliced, sauteed mushrooms and I have used cream of mushroom soup as well.

Directions

In a saucepan, boil the carrots, potato, onion and celery in water for 15 minutes or until tender.

Drain well.

Stir in peas, chicken and cream of chicken soup.

Pour into a greased 1-1/2-qt. deep baking dish.

Roll out pastry to fit top of dish.

*To cut time, I have used a pre-made frozen pie shell. I Allow it to thaw and rolled it flat. I have also used store bought puff pastry and made an aluminum foil tent to cover it if it begins to darken in color too quickly.

Place over filling.

Trim, seal and flute edges.

Cut slits in pastry.

Bake at 350 degrees F for 50 minutes or until crust is golden and filling is bubbly.
