Ingredients
  • 8 to 12 ounces uncooked rotini
  • 3 cloves garlic, coarsely chopped
  • 3 tablespoons olive oil
  • 1 (28-ounce) can chopped tomatoes
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 bunch fresh broccoli, chopped and cooked
  • 1 (10-ounce) package frozen peas and carrots, cooked
  • 4 boneless, skinless chicken breast halves, cooked and cubed
  • 3/4 cup grated Romano cheese, divided

Directions
  1. Cook rotini according to package directions until al dente. Drain. Turn into serving bowl. Keep warm.
  2. Meanwhile, sauté garlic in olive oil in deep skillet over low heat. Add tomatoes, salt and pepper. Simmer for 5 minutes. Stir in broccoli, peas and carrots, chicken and 1/2 cup cheese. Stir well. Simmer for 10 minutes. Pour over rotini. Toss to coat. Sprinkle remaining cheese on

This is my favorite. I have to use canned tomato's-can't get decent creoles anymore-but watcha gonna do, it's still delish. Thanks hon.
