Chocolate Rum Parfaits

- 6 ounces semisweet chocolate, coarsely chopped shopping list
- 1 tbsp cinnamon shopping list
- 1/4 tsp almond extract shopping list
- 1 1/2 cups whipping cream, divided shopping list
- 3 tbsp rum shopping list
- 3/4 tsp vanilla shopping list
- additional whipped cream for garnish shopping list
How to make it
- combine chocolate and 3 tbsp cream in top of double boiler. Heat until smooth, stirring occasionally.
- Gradually stir in rum, if desired; remove top pan from heat. Let stand at room temp to cool for 15 minutes.
- Combine cream and vanilla in small chilled bowl. Beat at low speed, then gradually increase speed until stiff, but not dry, peaks form.
- Gently fold whipped cream into cooled chocolate mixture until uniform in color. Spoon into 4 individual desert dishes.
- Refrigerate 2 to 3 hours until firm.
- Garnish with additional whipped cream.
