Coconut-pineapple Refrigerator Cake Recipe
As usual I don't remember where I got this recipe but I do know that it is really good. :o)

Ingredients
  • 1 box yellow cake mix
  • 1 can sweetened condensed milk
  • 20 oz. can crushed pineapple
  • 1 sm. pkg. coconut
  • 8 oz. Cool Whip

Directions
  1. Prepare 1 box yellow cake mix according to instructions.
  2. Bake in 9"x13" pan.
  3. While warm, puncture cake thoroughly with fork. ( I use a wooden spoon handle.)
  4. Pour one can sweetened condensed milk evenly on top of cake. Spread 1 can crushed pineapple over cake (do not drain).
  5. Sprinkle generously with coconut. Cool cake.
  6. Ice with Cool Whip.
  7. Refrigerate overnight.
  8. Store leftovers in refrigerator.

Gem, I'm going to give this a whirl. I think I only have an 8 oz. can of crushed pineapple...maybe chocolate cake with canned cherries and coconut--spice cake with chopped canned peaches, Could be fun coming up with combinations. Thanks for the idea! My regards to your friend Gina. :-)

I made it today..completely different flavor combination, but my husband loves it. I made one of those "Surprise Spice Cakes", you know the one with a can of tomato soup in the list of ingredients. I put on the condensed milk, and then some sliced canned peaches that I chopped up in the food processor. Coconut was the final touch. Yummy! Thanks, Gem!
