Coconut-pineapple Refrigerator Cake

As usual I don't remember where I got this recipe but I do know that it is really good. :o)

Prepare 1 box yellow cake mix according to instructions.
Bake in 9"x13" pan.
While warm, puncture cake thoroughly with fork. ( I use a wooden spoon handle.)
Pour one can sweetened condensed milk evenly on top of cake. Spread 1 can crushed pineapple over cake (do not drain).
Sprinkle generously with coconut. Cool cake.
Ice with Cool Whip.
Refrigerate overnight.
Store leftovers in refrigerator.

I made it today..completely different flavor combination, but my husband loves it. I made one of those "Surprise Spice Cakes", you know the one with a can of tomato soup in the list of ingredients. I put on the condensed milk, and then some sliced canned peaches that I chopped up in the food processor. Coconut was the final touch. Yummy! Thanks, Gem!

Gem, I'm going to give this a whirl. I think I only have an 8 oz. can of crushed pineapple...maybe chocolate cake with canned cherries and coconut--spice cake with chopped canned peaches, Could be fun coming up with combinations. Thanks for the idea! My regards to your friend Gina. :-)

Oh it is easy and taste devine. I love these "poke" cakes, any and all of them are my favorites.
