Firemans Hot Tamale Pie

- 2 lbs. lean ground beef shopping list
- 1 (14 ½- oz.) can stewed tomatoes shopping list
- 1 (4-oz.) can diced green chilies shopping list
- 2 (11-oz.) cans Mexican-style corn shopping list
- 2 (14 ½-oz.) jars salsa, preferably chunky style shopping list
- 1 (15-oz.) can tomato sauce shopping list
- 1 cup water shopping list
- Optional: 1 (4 ½-oz.) can chopped black olives shopping list
- Mexican seasoning, to taste shopping list
- 2 (8 1/2 –oz.) packages corn bread or corn muffin mix shopping list
- 2 eggs shopping list
- 1 cup milk shopping list
- 2 cups cheddar cheese, shredded shopping list
- Optional: 1 (4-oz.) can diced green chilies shopping list
How to make it
- Brown ground beef in large skillet.
- Drain.
- Stir in stewed tomatoes, 1 can green chilies, corn, salsa, tomato sauce, water, olives if desired and Mexican seasoning; let beef mixture simmer on low for 15 minutes.
- Preheat oven to 400 degrees.
- In large bowl, prepare corn bread batter following package directions using eggs and milk.
- Stir in Cheddar cheese and optional can chilies, if desired.
- Pour meat mixture into 9-by-13-inch ungreased baking dish.
- Pour corn bread batter on top and spread to edges to cover meat mixture.
- Bake at 400° for 20-30 minutes or until corn bread is lightly browned.

This is a great, hearty go-to meal...it's easy and just loaded with flavor. I have all the ingredients except the Mexi-corn...but I can sub regular corn and use my spicy Rotel and some fresh cilantro...yumm. Thanks so much for sharing, Conner. Can...more
