Broccoli Chicken Chowder Recipe

Ingredients
  • 2 Cups frozen broccoli florets, cooked and drained ( or fresh, steamed 5 minutes, drained)
  • 2 Tbl butter
  • 1/2 cup diced celery
  • 1/2 chopped carrot
  • 1 medium onion, chopped
  • 1 tsp fresh or 1/4 tsp dried thyme leaves
  • 1/4 C flour
  • 1 1/2 Cup milk
  • 1 (10 1/2 oz) can condensed chicken broth
  • 2 Cups of cooked chicken
  • 1 cup shredded American or cheddar dheese

Directions
  1. Cook broccoli according to pkg directions and drain or steam fresh broccoli 5 mintues and drain
  2. Melt margerine in a large saucepan over medium heat
  3. Add celery, carrot, onion and thyme;cook5 to 7 minutes or until crisp-tender. stirring ocassionally
  4. Stir flour into some of the milk, making a smooth paste...add milk a little at a time until thin, then stir in remaining milk and broth
  5. Add to to vegetable mixture and cook until mixture boils and thickens, stirring constantly
  6. Stir in chicken and broccoli;simmer 5 minutes or until heated through, stirring ocassionally.
  7. Add cheese; stir until melted

Saving this gem of a recipe for next month when it is a little cooler.

I made this 2 nights ago and it was really good. I let everyone put in their own cheese and we used monteray jack. Last night I just added more chicken and stock, and a little cream and we had it again. I forgot the thyme, but it would have made it even better. Thanks!! ~Dawn
