Very easy to make and tastes very good. After baking time the pudding will still be soft but don't worry about that it will turn out good.

Ingredients
  • 2 packets of plain biscuits
  • 1 glass of sugar
  • 6 glasses of milk
  • 1 vanilla sachet
  • 4 eggs
  • ½ cup of blanched and cut almonds
  • For Caramel
  • 1 glass of sugar
  • 1 spoonful lemon juice
  • a few spoonfuls of water just to wet sugar

Directions
  1. Place biscuits in a bowl and add sugar, vanilla and milk and let them soak until biscuits are soft.
  2. Blanche almonds. Place almonds in a small sauce pan and cover with water. Bring to boiling point and remove from heat. Empty them in a strainer and cool under cold water. Peel and cut into small pieces.
  3. Until biscuits are ready prepare caramel
  4. To prepare the caramel,
  5. Place the sugar, the water and lemon juice in a small frying pan and bring to boil. Lower heat and stir constantly until the sugar starts turning brown. Empty caramel syrup into a 28 cm round spring form tin and spread with a spoon before it caramelizes. Make sure to fill frying pan immediately with water as the sugar will get stiff and will be difficult to clean.
  6. When biscuits are soft beat the eggs and add to mixture, as well as the almonds and stir well. Pour mixture into the baking tin and bake in a preheated oven at 180o degrees for about 50 minutes.
  7. Let it cool just enough to be handled and turn the pudding in a round platter so that caramel is on the top. Do not let to cool down before turning over because the caramel with stick to the tin.

What is a vanilla "sachet" exactly? I'm not familiar with that term. Sounds good and I'd like to try it.


A sachet is what it is packed in like a small envelope. Just add 1 teaspoon of vanilla powder or vanilla essence, it's just to give it flavor.
