Scrambled Egg Casserole Recipe
Yummers. Can't go wrong with this magnificent egg dish. Good for breakfast, brunch or we even eat it sometimes for dinner. Yummy.

Ingredients
  • 1/2 cup butter divided
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 cups milk
  • 1 cup shredded American cheese
  • 1 cup cubed fully cooked ham
  • 1/4 cup sliced green onions
  • 12 eggs beaten
  • 4 ounce can sliced mushrooms drained
  • 1-1/2 cups soft bread crumbs
  • Additional sliced green onions

Directions
  1. In a medium saucepan melt 2 tablespoons butter.
  2. Add flour, salt and pepper then cook and stir until mixture begins to bubble.
  3. Gradually stir in milk and cook until thickened and bubbly stirring constantly.
  4. Remove from heat.
  5. Add cheese and mix well then set aside.
  6. In a large skillet saute ham and onions in 3 tablespoons butter until onions are tender.
  7. Add eggs then cook and stir until they begin to set.
  8. Add mushrooms and cheese sauce and mix well.
  9. Pour in a medium baking dish.
  10. Melt remaining butter then toss with bread crumbs and sprinkle over top of casserole.
  11. Cover and refrigerate for 3 hours or overnight.
  12. Bake uncovered at 350 for 30 minutes.
  13. Sprinkle with additional onions.
