Winter Vegetable Soup Recipe


WINTER VEGETABLE SOUP Recipe
A warming vegetable soup, full of goodness ideal for your 5-a-day.

Ingredients
  • 750ml of water
  • 2 chicken stock cubes (or vegetable cubes if vegetarian)
  • 400g potatoes
  • 200g carrots
  • 1/4 a good quality cabbage
  • 2-4 tomatoes depending on the size, skinned and chopped
  • salt and pepper to your taste
  • handful of fresh green beans

Directions
  1. Add water and stock bring to the boil
  2. Add potatoes, carrots and cabbage and slow boil for 15-20 minutes until potatoes are soft.
  3. Add tomatoes, green beans and salt and pepper to taste.
  4. simmer until thickened.
