Wild Rice Salad

- 2/3 C wild rice shopping list
- 1/2 C white rice shopping list
- 1/4 C chopped green onion shopping list
- 2 stalks celery, sliced thin on the diagonal shopping list
- 1/4 lb. snow peas, stringed and cut into 1-inch pieces shopping list
- 1/2 C raisins or currants shopping list
- 1 can (8 oz.) sliced water chestnuts, drained shopping list
- 3/4 C cashews, toasted shopping list
- Dressing: shopping list
- 1/4 to 1/2 C mayonnaise shopping list
- 2 Tbl. soy sauce or tamari shopping list
- 1 tsp. freshly grated ginger Root shopping list
- 1 tsp. minced garlic shopping list
- 1 tsp. finely grated lemon rind shopping list
- 1 tsp. fresh grated orange rind shopping list
- 2 Tbl. fresh lemon juice shopping list
- 2 tsp. fresh orange juice shopping list
- 2 dashes hot pepper sauce shopping list
- Crisp Green lettuce leaves shopping list
- Bright orange wedges shopping list
How to make it
- Cook wild and white rices seperately, according to package directions.
- Cool and combine with remaining salad ingredients.
- Whisk dressing ingredients together until smooth. Pour over salad and toss well.
- Serve on crisp green lettuce leaves with bright orange wedges for garnish.
