Mushrooms Creole

- 30 large mushrooms shopping list
- 1-1/2 cups peeled chopped eggplant shopping list
- 1/4 cup green bell pepper shopping list
- 1/4 cup chopped white onion shopping list
- 1 clove minced garlic shopping list
- 2 tablespoons olive oil shopping list
- 6 ounce can tomato paste shopping list
- 2 tablespoons water shopping list
- 1 tablespoon redwine vinegar shopping list
- 1-1/2 teaspoons thyme shopping list
- 1/2 teaspoon salt shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
How to make it
- Remove stems from mushrooms then chop 1 cup.
- Combine chopped mushrooms, eggplant, green pepper, onion, garlic and olive oil in a casserole dish and microwave on high for 6 minutes.
- Add remaining ingredients then microwave on high for 8 minutes.
- Place mushroom caps on glass serving tray and loosely cover with waxed paper.
- Microwave on high for 3 minutes.
- Fill with eggplant mixture mounding slightly then microwave on high 4 minutes longer.
- Serve warm.
