How to make it

  • Remove stems from mushrooms then chop 1 cup.
  • Combine chopped mushrooms, eggplant, green pepper, onion, garlic and olive oil in a casserole dish and microwave on high for 6 minutes.
  • Add remaining ingredients then microwave on high for 8 minutes.
  • Place mushroom caps on glass serving tray and loosely cover with waxed paper.
  • Microwave on high for 3 minutes.
  • Fill with eggplant mixture mounding slightly then microwave on high 4 minutes longer.
  • Serve warm.
