  • COMBINE THE BUTTER, THE SUGAR, THE CINNAMON AND THE EGG YOKES FOR 10 MINS.
  • THEN, WHISK THE WHITES INTO A MERINGUE AND MIX IT WITH THE BUTTER MIXTURE LITTLE BY LITTLE.
  • AFTER THAT, MIX THE MINCED WALNUTS WITH THE FLOUR AND THE BAKING POWDER AND ADD THEM ALL INTO THE MIXTURE OF THE BUTTER AND EGGS, LITTLE BY LITTLE, TOO, WORKING THE MIXTURE OUT CONTINUALLY UNTIL IT BECOMES SMOOTH AND EVEN.
  • THEN, EMPTY IT INTO A PROPER CAST IRON GRIDDLE (BUTTERED AND DREDGED WITH RUSK CRUMBS), DREDGE IT WITH THE REST MINCED WALNUTS AND BAKE IT AT 350 FOR ABOUT 30- 45 MINUTES.
  • MEANWHILE PREPARE THE SYRUP WITH 1 1/2 CUP OF SUGAR, 2 CUPS OF WATER AND 1-2 GLASSES OF BRANDY.
  • WHEN THE PIE IS READY, TAKE IT OUT OF THE OVEN AND SOAK IT IN THE HOT SYRUP.

    Rusk is a type of whole wheat biscuit that is very hard and crunchy....just look up "Greek whole wheat rusk biscuits" on the internet. They don't sell them in regular supermarkets....only in Greek specialty stores or you can order off the internet.

    This should go to "bye-bye waistline" Hall of Fame :) - it looks soooooooooooooooo good! I grew up in Odessa, which is your neighbor over the Black Sea. Our cuisine was very much influenced by Greeks. I may try this one... Thanks for posting great stuff from Yiayia :)

    this sounds good too...Hmmmm....How about a recipe (simplified) for Baklava?? I love baklava...but it looks so difficult to make right!!
