Gingersnap Pumpkin Ice Cream Squares

- 1 16 oz. canned pumpkin shopping list
- 1 cup sugar shopping list
- 1 tsp. salt shopping list
- 1 tsp. ground ginger shopping list
- 1 tsp. cinnamon shopping list
- 1/2 tsp. nutmeg shopping list
- 1 cup chopped pecans shopping list
- 1/2 gallon vanilla ice cream shopping list
- 36 gingersnaps shopping list
- whipped cream and pecan halves for garnish shopping list
How to make it
- Combine first 6 ingredients
- Fold in chopped pecans
- In large mixing bowl., fold pumpkin mixture into ice cream
- Line bottom of 13x9x2 pan with half of gingersnaps
- Top with half of ice cream mixture
- Repeat layers
- Freeze until firm( about 5 hours)
- cut into squares
- Garnish with whipped cream and pecan halves
