Pasta Fritters

- 1/4 16 oz. package Capellini or spaghettini, cooked shopping list
- salad oil shopping list
- 3 green onions, finely chopped shopping list
- 1/4 all-purpose flour shopping list
- 2 Tbl. grated parmesan cheese shopping list
- 1/2 tsp. salt shopping list
- 1/4 tsp. ground black pepper shopping list
- 1 large egg shopping list
- water shopping list
How to make it
- Coarsely chop cooked capellini; set aside.
- In small saucepan over medium heat, in 1 Tbl. hot salad oil, cook green onions, stirring occasionally, until tender and golden.
- In medium bowl, with wire whisk or fork, mix flour, parmesan cheese, salt, pepper, egg, and 1/4 C water; stir in green onions and capellini until well coated.
- In 12-inch non-stick skillet over medium-high heat, 2 Tbl. salad oil until very hot. Into hot oil, drop mixture by scant 1/4 C into 4 mounds, about 2 inches apart. With pancake turner, flatten until golden brown on both sides. Remove to paper towels to drain; keep warm.
- Repeat with remaining fritter mixture.
