Wild Rice With Peppers And Feta

- 1 cups cooked wild rice (1/2 cup uncooked) shopping list
- 3 cup cooked brown rice (1 1/2 cups uncooked) shopping list
- 4 - 8 cloves garlic pressed or slivered shopping list
- 2 onions sliced into rings shopping list
- 3 cubed green, red &/or yellow peppers shopping list
- 1 can corn niblets shopping list
- 1/2 cup feta cheese shopping list
How to make it
- Cook rice for approximately 40 minutes
- While rice is cooking, prepare onion, garlic and peppers
- When the rice is almost done (30 minutes) start sautéing onion and garlic in a large non-stick pan (or use 1 Tbsp olive oil)
- Add the peppers to the onion and garlic, when they are tender-crisp add the corn and rice
- When the corn is heated through (a few minutes) add the feta cheese
- Serve before the feta is completely melted, but is warmed up
- Great served with grilled chicken!
