Ingredients

How to make it

  • Cook rice for approximately 40 minutes
  • While rice is cooking, prepare onion, garlic and peppers
  • When the rice is almost done (30 minutes) start sautéing onion and garlic in a large non-stick pan (or use 1 Tbsp olive oil)
  • Add the peppers to the onion and garlic, when they are tender-crisp add the corn and rice
  • When the corn is heated through (a few minutes) add the feta cheese
  • Serve before the feta is completely melted, but is warmed up
  • Great served with grilled chicken!
