Seafood Fettuccine Recipe
The sauce will look thin, but is the perfect consistency for coating the pasta. It's like Alfredo without the flour or other thickener. From, Cooking Light.

Ingredients
  • 1 1/2 Tbl. Butter
  • 1 C chopped Green Onions
  • 4 Garlic cloves, minced
  • 1 pound medium Shrimp, peeled
  • 1 pound Sea Scallops
  • 2 C Half-and-Half
  • 1/2 tsp. Salt
  • 1/4 tsp. Black Pepper
  • 1/2 pound lump Crab Meat, shell pieces removed
  • 3/4 C (3 oz.) grated fresh Parmesan Cheese, divided
  • 8 C hot cooked Fettuccine (about 1 pound uncooked pasta)
  • 1/4 C chopped fresh Parsley

Directions
  1. Melt butter in a 12-inch nonstick skillet over medium-high heat.
  2. Add onions and garlic; saute 1 minute or until tender.
  3. Add shrimp and scallops; saute 3 minutes or until done. Reduce heat to medium low.
  4. Add half-and-half, salt, pepper, and crabmeat; cook 3 minutes or until thoroughly heated, stirring constantly (do not boil).
  5. Gradually sprinkle 1/2 C cheese over seafood mixture, stirring constantly; cook 1 minute, stirring constantly. Remove from heat.
  6. Combbine pasta and seafood mixture in a large bowl.
  7. Top each serving with 1 1/2 tsp. cheese and 1 1/2 tsp. parsley.
