Thinking of spring? Everyone needs a delicious, healthy, tasty alternative to the usual fare. 9 succelent shrimp per serving for 125 calories is it. Add grilled vegetables and you've got a wonderful, impressive meal!

Ingredients
  • 1/3 Cup chopped parsley
  • 1/3 C chopped basil
  • 2 Garlic cloves, minced
  • 4 tsp EVOO
  • 3/4 tsp salt
  • 1/4 tsp ground pepper
  • 1 1/2 lbs large, uncooked shrimp, peeled and deveined

Directions
  1. Mix all ingredients , except shrimp in a zip-close bag.
  2. Add shrimp, squeeze out the air and seal the bag, turning to coat shrimp well
  3. Refrigerate 1 hour or overnite
  4. Heat grill to medium high and oil grates (if using skewers) or oil grill pan.
  5. Cook shrimp until pink, turning once, about 2-3 minutes each side
  6. Serve with your choice of gilled vegetables.
