Artichoke And Ripe Olive Tuna Salad Recipe
This makes a pretty presentation for a luncheon. Any leftovers make great sandwiches.

Ingredients
  • 2 cans chunk light tuna, drained and flaked
  • 1 C. chopped canned artichoke hearts
  • ½ C. sliced olives
  • ¼ C. chopped scallions
  • 1/3 C. Mayo
  • 3 cloves garlic minced

Directions
  1. In a med bowl, combine all the ingredients. Serve on a bed of lettuce or spinach with sliced tomatoes, or use to stuff hollowed out tomatoes or puff pastry shells.
