Ingredients
  • 1 litre Beef stock
  • 2 Limes
  • 1 tablespoon Soy Sauce
  • 1 large chilli pepper
  • 1 tablespoon fresh ginger
  • 300g Beef
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 tablespoons Oil
  • 1/2 package Noodles
  • 2 Red onions
  • 1dl Bean sprouts
  • 3 tablespoons Coriander (Cilantro)
  • 1 clove Garlic

Directions
  1. Bring beef stock to the boil.
  2. Juice the two limes and add to the beef stock.
  3. Flavour the soup with soy sauce to taste.
  4. Add the chopped chilli pepper and ginger.
  5. Cut the beef into 1/2cm slices. Season with salt and pepper before frying lightly in the oil. Keep the beef slices hot.
  6. Whilst the beef is frying, cook the noodles in the soup (see package for cooking instructions)
  7. Once the noodles are cooked add the red onions, bean sprouts, coriander and garlic to the soup. The vegetables should only cook in the soup for a few seconds - they should remain crisp until serving.
  8. Divide the noodle soup into two large bowls.
  9. Arrange the sliced beef on top.
  10. Decorate with strips of lime and coriander leaves.

Hmmm, think I'll scrap my original dinner plan and make this instead lol Sounds delicious and much much simpler!

Alterations


One red onion (sliced) and that was more than enough! Next time I'll (again) only use one and probably slice half to add at the end, but finely chop the other half and add to the soup before the beef is added for some onioney goodness.
I'd also add more vegetables, like mushrooms, peas, carrots, etc.
Lastly, as it ended up quite sour, I may trying using the juice of only 1 1/2 limes rather than two next time.


Do you use sesame oil?


I used rapeseed oil, but I bet sesame oil would be very tasty. Thanks for suggesting it.
