Mango Ketchup Recipe
MANGO KETCHUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mundey Estate in Haley Texas in 1992.

Ingredients
  • 4 medium mangos
  • 2 ounces vinegar
  • 1 tablespoon ginger
  • 1 dash cinnamon
  • 1 teaspoon salt
  • 1/2 cup raw sugar
  • 1/2 cup white wine
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cayenne pepper
  • 1 whole clove

Directions
  1. Peel and clean mango then remove pulp.
  2. Put pulp in food processor fitted with stainless steel blade.
  3. Add remaining ingredients and pulse together.
  4. Cook mixture over slow heat for 1 hour in heavy saucepan then remove from heat and cool.
  5. Strain through five sieve
