Beef Bourguignon

- 1-1/2 pounds beef round cut in 2" cubes shopping list
- 1 cup red wine shopping list
- 1 tablespoon olive oil shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon pepper shopping list
- 1/4 teaspoon ground thyme shopping list
- 1/2 bay leaf shopping list
- 1/2 celery stalk shopping list
- 1-1/2 garlic cloves shopping list
- 1 carrot shopping list
- 1-1/2 white onions shopping list
- 3-1/2 tablespoons butter shopping list
- 1-1/2 teaspoons olive oil shopping list
- 2 tablespoons all purpose flour shopping list
- 1/4 cup beef broth shopping list
- 1-1/2 teaspoons tomato paste shopping list
- 3/4 cup small white onions par-boiled shopping list
- 1 ounce mushrooms sliced shopping list
- 2-1/2 red ripe tomatoes shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon sugar shopping list
How to make it
- Combine wine, 2 tablespoons olive oil, salt, pepper, thyme and bay leaf.
- Slice one onion, one carrot, one clove of garlic and celery then add to wine mixture.
- Marinate beef in this mixture for at least two hours and up to 24 hours turning occasionally.
- Remove meat and pat dry then strain marinade and reserve.
- Heat 2 tablespoons butter with olive oil in heavy skillet then brown meat quickly on all sides.
- Remove meat to a baking dish then deglaze skillet with 1/4 cup reserved marinade.
- Add to baking dish.
- Chop remaining onions, carrot and garlic finely.
- Melt 1/4 cup butter in skillet and sauté chopped garlic, onions and carrot until lightly browned.
- Blend in flour and stir one minute then add marinade, broth and tomato paste.
- Stir until mixture comes to boil then pour over meat and cover then cook in 350 oven for 3 hours.
- Melt 1 tablespoon butter in skillet and sauté white onions with salt and sugar until golden.
- Add mushrooms and sauté for two minutes more.
- Add white onions, mushrooms and tomatoes to beef then continue to bake 10 more minutes.
- Serve with noodles or rice.
