Beef Bourguignon Recipe
BEEF BOURGUIGNON This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mundey Estate in Haley Texas in 1992.

Ingredients
  • 1-1/2 pounds beef round cut in 2" cubes
  • 1 cup red wine
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon ground thyme
  • 1/2 bay leaf
  • 1/2 celery stalk
  • 1-1/2 garlic cloves
  • 1 carrot
  • 1-1/2 white onions
  • 3-1/2 tablespoons butter
  • 1-1/2 teaspoons olive oil
  • 2 tablespoons all purpose flour
  • 1/4 cup beef broth
  • 1-1/2 teaspoons tomato paste
  • 3/4 cup small white onions par-boiled
  • 1 ounce mushrooms sliced
  • 2-1/2 red ripe tomatoes
  • 1/4 teaspoon salt
  • 1/4 teaspoon sugar

Directions
  1. Combine wine, 2 tablespoons olive oil, salt, pepper, thyme and bay leaf.
  2. Slice one onion, one carrot, one clove of garlic and celery then add to wine mixture.
  3. Marinate beef in this mixture for at least two hours and up to 24 hours turning occasionally.
  4. Remove meat and pat dry then strain marinade and reserve.
  5. Heat 2 tablespoons butter with olive oil in heavy skillet then brown meat quickly on all sides.
  6. Remove meat to a baking dish then deglaze skillet with 1/4 cup reserved marinade.
  7. Add to baking dish.
  8. Chop remaining onions, carrot and garlic finely.
  9. Melt 1/4 cup butter in skillet and sauté chopped garlic, onions and carrot until lightly browned.
  10. Blend in flour and stir one minute then add marinade, broth and tomato paste.
  11. Stir until mixture comes to boil then pour over meat and cover then cook in 350 oven for 3 hours.
  12. Melt 1 tablespoon butter in skillet and sauté white onions with salt and sugar until golden.
  13. Add mushrooms and sauté for two minutes more.
  14. Add white onions, mushrooms and tomatoes to beef then continue to bake 10 more minutes.
  15. Serve with noodles or rice.
