Ingredients
  • One 10 oz package frozen chopped spinach
  • Four boneless, skinless chicken breasts
  • 1 tsp salt
  • 1 tsp poultry seasoning
  • 1 Tblsp butter
  • 2 Tblsp cornstarch
  • 1 1/2 cups fat free half and half
  • 1/2 cup shredded reduced fat Swiss cheese
  • 1/4 tsp black pepper
  • 1/8 tsp grated nutmeg
  • 1/4 tsp paprika

Directions
  1. Preheat oven to 350. Coat a 13x9 inch baking dish with fat free cooking spray.
  2. Cook the spinach according to the package directions, leaving out any salt. Dran well.
  3. Sprinke the chicken all over with salt and poultry seasoning. Place the chicken breasts in the prepared pan. Arrange the spinach over and around the chicken.
  4. Melt the butter in a meduim saucepan over medium heat. In medium bowl whisk together the cornstarch and half and half, then whisk the mixture into the butter. Cook, whisking constantly, until the mixture bubbles and thickens.
  5. Remove from the heat and stir in the Swiss cheese, black pepper and nutmeg.
  6. Spoon the sauce evenly over the chicken and sprinkle with the paprika.
  7. Bake 30 minutes

The cicken was very moist,yet extremely bland. I used 1% milk rather than the 1/2 and 1/2 and the sauce was fine. I also used a sauce thickening agent instead of corn starch, because I don't use corn starch. Definately needs salt and perhaps garlic or scallions to spunk it up a bit.
