Butter Lettuce Salad With Bacon Dried Cherries And Roquerfort Vinaigrette

An easy and lovely salad. You'll be asking for seconds. From, How Many Potatoes in a Pound?

8 slices bacon, diced shopping list
3 Tbl. mayonnaise shopping list
2 Tbl. white vinegar shopping list
1/2 C vegetable oil shopping list
1 C (about 4 oz.) crumbled Roquefort cheese shopping list
salt and pepper shopping list
2 large heads butter lettuce, outer leaves removed (save for another use), remaining leaves torn into large pieces shopping list
1/2 C (about 3 oz.) dried cherries, preferably tart shopping list

Saute bacon over medium-high heat until brown and crisp.
Use a slotted spoon to transfer bacon to paper towels to drain.
In a medium size bowl, whisk mayonnaise and vinegar. Gradually whisk oil, then stir in cheese.
Season with salt and pepper.
Toss lettuce, half the cherries and half the bacon with enough dressing to coat.
To serve, divide salad among 6 plates.
Top with remaining cherries and bacon.
