Butter Lettuce Salad With Bacon Dried Cherries And Roquerfort Vinaigrette

- 8 slices bacon, diced shopping list
- 3 Tbl. mayonnaise shopping list
- 2 Tbl. white vinegar shopping list
- 1/2 C vegetable oil shopping list
- 1 C (about 4 oz.) crumbled Roquefort cheese shopping list
- salt and pepper shopping list
- 2 large heads butter lettuce, outer leaves removed (save for another use), remaining leaves torn into large pieces shopping list
- 1/2 C (about 3 oz.) dried cherries, preferably tart shopping list
How to make it
- Saute bacon over medium-high heat until brown and crisp.
- Use a slotted spoon to transfer bacon to paper towels to drain.
- In a medium size bowl, whisk mayonnaise and vinegar. Gradually whisk oil, then stir in cheese.
- Season with salt and pepper.
- Toss lettuce, half the cherries and half the bacon with enough dressing to coat.
- To serve, divide salad among 6 plates.
- Top with remaining cherries and bacon.
