I had this in a restaurant once. It's juicy, citrusy and colorful. From, How Many Potatoes in a Pound?

Ingredients
  • 1 head Red Cabbage, shredded
  • 3 Carrots, shredded
  • 3 Apples, shredded
  • 1/2 C Orange Juice Concentrate
  • 1/4 C Cider Vinegar
  • 1/4 C Oil (your choice)
  • 1 tsp. Salt
  • 2 Tbl. Sugar
  • 1/4 tsp. each Cardamon, Cinnamon, and Celery Seed

Directions
  1. Combine all ingredients and mix thoroughly.
  2. Stores well in the refrigerator.
