Impossible Pie Recipe

How to make it

  • Preheat oven to 350
  • Beat eggs, add butter, sugar, flour, baking powder, salt , vanilla and milk.
  • Next mix in coconut.
  • Put in 2 ungreased 8 inch pie pans
  • Bake for 40 to 45 minutes
  • ***No there is no crust.

    FYI it's called Impossible Pie because as this cooks, everything separates. You end up with a crust, a custardy center and a nice toasted coconut top! It's so good.
