Impossible Pie Recipe

Ingredients

4 eggs

1/2 stick margarine

1 1/2 cups sugar

1/2 cup flour

1/2 tsp baking powder

1/4 tsp salt

2 cups milk

1 (4 oz can coconut)

1 tsp vanilla

Directions

Preheat oven to 350

Beat eggs, add butter, sugar, flour, baking powder, salt , vanilla and milk.

Next mix in coconut.

Put in 2 ungreased 8 inch pie pans

Bake for 40 to 45 minutes

***No there is no crust.

FYI it's called Impossible Pie because as this cooks, everything separates. You end up with a crust, a custardy center and a nice toasted coconut top! It's so good.
