Frittata Di Verdura

- 1/2 pound (2 cups) zucchini, sliced shopping list
- 1/2 C chopped onions shopping list
- 2 Tbl. olive oil shopping list
- 3 eggs shopping list
- 1 C cooked vermicelli, cut into small pieces shopping list
- 1/4 tsp. salt shopping list
- 1/8 tsp. pepper shopping list
- 1/4 C grated parmesan cheese shopping list
- 1 tsp. olive oil shopping list
How to make it
- Saute zucchini and onions in 2 tbl. olive oil for 10 to 15 minutes until crisp-tender.
- Beat eggs; stir in vermicelli, zucchini mixture, salt, pepper, and Parmesan cheese.
- Heat 1 tsp. olive oil in an 8-inch, nonstick skillet on medium heat.
- Pour in zucchini mixture (flatten gently with a spatula) and fry for 3 to 4 minutes or until brown and crisp.
- Slide out of pan onto flat plate; invert the skillet over plate and reverse. Fry the other side for 3 to 4 minutes.
- Cool 5 minutes.
