How to make it

  • Saute zucchini and onions in 2 tbl. olive oil for 10 to 15 minutes until crisp-tender.
  • Beat eggs; stir in vermicelli, zucchini mixture, salt, pepper, and Parmesan cheese.
  • Heat 1 tsp. olive oil in an 8-inch, nonstick skillet on medium heat.
  • Pour in zucchini mixture (flatten gently with a spatula) and fry for 3 to 4 minutes or until brown and crisp.
  • Slide out of pan onto flat plate; invert the skillet over plate and reverse. Fry the other side for 3 to 4 minutes.
  • Cool 5 minutes.
