Ingredients
  • 1/2 pound (2 cups) Zucchini, sliced
  • 1/2 C chopped Onions
  • 2 Tbl. Olive Oil
  • 3 Eggs
  • 1 C cooked Vermicelli, cut into small pieces
  • 1/4 tsp. Salt
  • 1/8 tsp. Pepper
  • 1/4 C grated Parmesan Cheese
  • 1 tsp. Olive Oil

Directions
  1. Saute zucchini and onions in 2 tbl. olive oil for 10 to 15 minutes until crisp-tender.
  2. Beat eggs; stir in vermicelli, zucchini mixture, salt, pepper, and Parmesan cheese.
  3. Heat 1 tsp. olive oil in an 8-inch, nonstick skillet on medium heat.
  4. Pour in zucchini mixture (flatten gently with a spatula) and fry for 3 to 4 minutes or until brown and crisp.
  5. Slide out of pan onto flat plate; invert the skillet over plate and reverse. Fry the other side for 3 to 4 minutes.
  6. Cool 5 minutes.
