For lazy or rushed days … the great flavor of this recipe is in the Basil and Balsamic Mayonaise.

Ingredients
- 2 chicken breasts
- 250 gr. Mayonaise
- ½ cup fresh basil leaves
- ¼ piece of onion
- 2 garlic cloves
- 2 teaspoons of mustard ( I like Dijon)
- 3 tbsp. Balsamic Vinegar
- ½ tsp. Fresh ground pepper
- 2 Roman lettuces
- ¼ cup of celery cutted into little chunks ( optional)
- 6 large breads ( your favorite breads….)
- Butter to spread inside each bread.
- 3 Tomatoes cutted in slices
Directions
- In a large pan over médium heat, cook the chicken breasts with a piece of onion, salt and herbs (if you want). When chicken breasts are ready, cut them into medium pieces and set aside.
- For the Basil Mayonaise: In the blender, blend Mayonaise , fresh basil leaves, garlic, onion, mustard, balsamic vinegar, ground black pepper and salt if you want.
- Wash, dry and cut the lettuce in pieces; mix lettuce, chicken brest pieces ,celery and mix well.
- Cut each bread and spread butter inside.
- Set the chicken mix inside each bread, put tomatoes close breads and enjoy.
