EASY POT PIE TYPE DISH. GOT THIS RECIPE FROM A FRIEND SOME TIME AGO. IT WAS ONE OF THE FAMILY FAVORITES AND BECAME ONE OF OURS

  • 2 CUPS COOKED DICED WHITE MEAT CHICKEN
  • 1/2 CUPS CELERY
  • 1 (16 OZ) FROZEN VEGETABLES (BROCCOLI, CARROT MIX)
  • 2 (10 3/4 OZ ) CREAM OF CHICKEN SOUP
  • 1/4 PEPPER
  • 1 CUP AMERICAN CHEESE, SHREDDED
  • TOPPING
  • 1 C MILK
  • 2 EGGS
  • 2 TBS MARGARINE, MELTED
  • 1 C FLOUR
  • 1/4 TSP SALT

Directions
  1. PREHEAT OVEN TO 425. CAOMBINE ALL FILLING INGREDIENTS EXCEPT CHEESEIN 12" SKILLET. COOK OVER MEDIUM HEAT, STIRRING OCCASIONALLY, UNTIL MIXTURE COMES TO A BOIL. ABOUT 6 MINUTES.
  2. MEANWHILE, COMBINE MILK, EGGS AND BUTTER IN A SMALL MIXING BOWL. BEAT 1 MINUTE OR UNTIL SMOOTH.
  3. POUR HOT CHICKEN MIXTURE INTO UNGREASED 13X9", 3 QT. BAKING DISH. TOP WITH CHEESE. POUR TOPPING OVER MIXTURE, COVERING THE CHEESE.
  4. BAKE 25 MINUTES OR UNTIL PUFFED AND LIGHTLY BROWNED.
