Sunny Morning Brunch Cake Recipe
This cake can be used for Brunch as well at regular dessert time..Delicious with a cup of good coffee...Enjoy!!! This recipe came of the side of a cake mix box.....Its a great coffee cake..

Ingredients
  • 1 extra moist yellow cake mix
  • 1 cup sour cream
  • 3 eggs, slightly beaten
  • 1/3 cup oil
  • 1/3 cup water
  • 1 teaspoon almond extract
  • 1/4 cup flake sweetened coconut
  • 1/4 cup blanched almonds, sliced
  • 1 12oz jar apricot preserves

Directions
  1. Preheat oven to 350 degrees
  2. In a large mixing bowl combine cake mix, sour cream, eggs, oil, water, and almond extract
  3. Beat for 3 minutes at medium speed
  4. Generously grease a 10 inch tube pan
  5. sprinkle coconut and almonds in pan
  6. Then top with 1/3 jar of preserves
  7. Pour in half of cake batter
  8. Dot with remaining preserves and cover with remaining cake batter
  9. Bake 50 to 60 minutes
  10. Cool 30 minutes then invert on serving dish

Mmmmmm! This sounds wonderful!


This was very good...made it on Superbowl Sunday and it was a big hit.


Nice cake, I loved the apricot jam, it was very moist and delicious. It was surprisingly easy to do too. Always a plus, thank you dear.
