Sunny Morning Brunch Cake

- 1 extra moist yellow cake mix shopping list
- 1 cup sour cream shopping list
- 3 eggs, slightly beaten shopping list
- 1/3 cup oil shopping list
- 1/3 cup water shopping list
- 1 teaspoon almond extract shopping list
- 1/4 cup flake sweetened coconut shopping list
- 1/4 cup blanched almonds, sliced shopping list
- 1 12oz jar apricot preserves shopping list
How to make it
- Preheat oven to 350 degrees
- In a large mixing bowl combine cake mix, sour cream, eggs, oil, water, and almond extract
- Beat for 3 minutes at medium speed
- Generously grease a 10 inch tube pan
- sprinkle coconut and almonds in pan
- Then top with 1/3 jar of preserves
- Pour in half of cake batter
- Dot with remaining preserves and cover with remaining cake batter
- Bake 50 to 60 minutes
- Cool 30 minutes then invert on serving dish
