Sunny Morning Brunch Cake Recipe

Ingredients

1 extra moist yellow cake mix

1 cup sour cream

3 eggs, slightly beaten

1/3 cup oil

1/3 cup water

1 teaspoon almond extract

1/4 cup flake sweetened coconut

1/4 cup blanched almonds, sliced

1 12oz jar apricot preserves

Directions

Preheat oven to 350 degrees

In a large mixing bowl combine cake mix, sour cream, eggs, oil, water, and almond extract

Beat for 3 minutes at medium speed

Generously grease a 10 inch tube pan

sprinkle coconut and almonds in pan

Then top with 1/3 jar of preserves

Pour in half of cake batter

Dot with remaining preserves and cover with remaining cake batter

Bake 50 to 60 minutes

Cool 30 minutes then invert on serving dish
