Ingredients

How to make it

  • Put a dutch oven over medium heat.
  • Add butter, onions, and celery and a pinch or two of salt - sweat onions and celery until they are translucent
  • Add flour, sprinkling evenly over celery and onions, stir until flour is fully mixed in
  • Add broth, bring to a boil, pepper as desired
  • Add potatoes, cover, and lower heat to a simmer, allow potatoes to cook for 10 minutes
  • Add sausage, allow to cook for 10 minutes
  • Make sure the soup to this point is at a low simmer and add the milk, stir
  • Add cheese, a handful at a time while stirring, and allow each handful to melt into the soup
  • Check the taste, adjust salt/pepper and leave on low heat until ready to serve

    hmmm, this is lipsmacking good. certainly got my five. and now i finally know how to explain what to do with onions for some of my recipes (i have problems finding the correct english expressions): sweat until translucent! you put that so well - i shall remember the next time i need to write this. thank you for this help, to.
