How to make it

  • Sift together dry ingredients
  • Mix oil, sugar, eggs, pineapple, carrots, vanilla and nuts, add to dry ingredients, mix.
  • Bake in a well greased and floured bundt cake pan or angle food pan, for 1 hour in a 350 degree oven.
  • For glaze add butter, sugar and orange juice together in a saucepan and bring to a full boil. Pour over cake while still hot.

    My mother used to make an orange glaze with the carrot cake I have posted.... I thought it was weird but when I think about it, the glaze was really good & different! I sure miss her.
    I somehow bypassed this recipe until now! Thank you for sharing! jett

    It's an old recipe of my Grandmother. In fact, I am the only one with the recipe and everyone in the family is begging me for it. So now the cat is out of the bag, hehe
