Orange Glazed Carrot Cake Recipe

Ingredients

Cake:

3 cups flour

1 tsp. cinnamon

1 tsp. salt

1 tsp. baking soda

1 1/2 cups vegitable oil

2 cups sugar

2 cups grated carrots

3 eggs, slightly beatened

2 tsp. vanilla

1 cup crushed pineapple (drained)

1 cup chopped walnuts

Glaze:

1/4 cup butter

2/3 cup sugar

1/3 cup orange juice

Directions

Sift together dry ingredients

Mix oil, sugar, eggs, pineapple, carrots, vanilla and nuts, add to dry ingredients, mix.

Bake in a well greased and floured bundt cake pan or angle food pan, for 1 hour in a 350 degree oven.

For glaze add butter, sugar and orange juice together in a saucepan and bring to a full boil. Pour over cake while still hot.

It's an old recipe of my Grandmother. In fact, I am the only one with the recipe and everyone in the family is begging me for it. So now the cat is out of the bag, hehe
