Pork Tenderloin with Peach Glaze

- 1 lime shopping list
- 1/2c peach preserves shopping list
- 1 whole pork tenderloin(11/4 lb) shopping list
- 2 bunches green onions shopping list
- 1 tsp. olive oil shopping list
- 4 med. peaches,each cut in half and pitted. shopping list
How to make it
- Prepare outdoor grill for cooking over medium heat. From lime,grate 1 tsp. of peel and squeeze 1 Tbs. juice. Make peach glaze: In med. bowl,stir preserves,lemon peel and juice,1/2 tsp salt,and 1/4 tsp. gr. black pepper until blended. Spoon 1/4c. glaze into small bowl. Cut pork tenderloin crosswise in half,then cut each piece lengthwise in half. Place pork on grill rack;cover and cook 5 mins. Turn pork over;brush with glaze from med. bowl. Cover and cook 5 to 6 mins longer or till pork is browned on the outside and still slightly pink on the inside,brushing several times with glaze remaining in med. bowl. Transfer pork to cutting board.
- Meanwhile ,toss green onions with oil,1/4tsp salt and 1/8 tsp.ground black pepper. Place green onions and peaches,cut side down, on the same grill rack;cook 3 mins. ,turning green onions over once. Transfer onions to platter. Turn peaches over and brush with glaze from small bowl;cook 3 mins longer or till browned and tender. Transfer to platter with green onions.
- Slice pork and serve with green onions and peaches.
