Under The Sea - Seafood Casserole

- 2 tbsp butter shopping list
- 1tbsp olive oil shopping list
- 1 tbsp minced garlic shopping list
- 1 lbs firm flesh fish, such as ocean perch, catfish, etc - cubed shopping list
- 1 lbs medium shrimp, pealed and de-veined shopping list
- 1/2 lbs medium size scallop (fresh or thawed) shopping list
- 1/2 pound craw fish tail meat (fresh or thawed) - optional shopping list
- 1 lbs bag of frozen chopped spinach - thawed shopping list
- 1/2 green bell pepper, cored and sliced shopping list
- 1 tbsp dry tarragon shopping list
- 2 tbsp parsley flakes shopping list
- 1/2 lemon shopping list
- 1/2 tbsp kosher salt shopping list
- 2 tbsp Cajun/creole seasoning shopping list
- 1/2 tsp lemon pepper shopping list
- 1/2 tsp red pepper flakes shopping list
- 1 cup heavy cream shopping list
How to make it
- Cube fish and sprinkle Cajun spice all over it.
- Slice bell pepper and thaw spinach according to the instructions on the package
- Heat oil and butter over medium heat
- Roast garlic until golden and fragrant
- Fold in all of the seafood and saute for 5-6 minutes
- Add lemon juice, salt and all herbs and spices
- Add spinach and bell pepper
- Saute over medium heat until all liquid is gone
- Add cream, heat through

Mmmmm...if only my hubby would eat shellfish. Fridays during Lent would be so much more delicious with dinners like this! :( Such is life. I can dream though! Or, on a night he's gone for a meeting I can invite my sisters over for a feast! :) ...more
