Under The Sea - Seafood Casserole Recipe
I whipped that up one night craving seafood. It turned out to be better then I hoped and I had to write it down. Craw fish is optional - for those who like a stronger taste

Ingredients
  • 2 tbsp butter
  • 1tbsp olive oil
  • 1 tbsp minced garlic
  • 1 lbs firm flesh fish, such as ocean perch, catfish, etc - cubed
  • 1 lbs medium shrimp, pealed and de-veined
  • 1/2 lbs medium size scallop (fresh or thawed)
  • 1/2 pound craw fish tail meat (fresh or thawed) - optional
  • 1 lbs bag of frozen chopped spinach - thawed
  • 1/2 green bell pepper, cored and sliced
  • 1 tbsp dry tarragon
  • 2 tbsp parsley flakes
  • 1/2 lemon
  • 1/2 tbsp kosher salt
  • 2 tbsp Cajun/creole seasoning
  • 1/2 tsp lemon pepper
  • 1/2 tsp red pepper flakes
  • 1 cup heavy cream

Directions
  1. Cube fish and sprinkle Cajun spice all over it.
  2. Slice bell pepper and thaw spinach according to the instructions on the package
  3. Heat oil and butter over medium heat
  4. Roast garlic until golden and fragrant
  5. Fold in all of the seafood and saute for 5-6 minutes
  6. Add lemon juice, salt and all herbs and spices
  7. Add spinach and bell pepper
  8. Saute over medium heat until all liquid is gone
  9. Add cream, heat through

Mmmmm...if only my hubby would eat shellfish. Fridays during Lent would be so much more delicious with dinners like this! :( Such is life. I can dream though! Or, on a night he's gone for a meeting I can invite my sisters over for a feast! :) Thanks for sharing! - Natalie
