How to make it

  • Cube fish and sprinkle Cajun spice all over it.
  • Slice bell pepper and thaw spinach according to the instructions on the package
  • Heat oil and butter over medium heat
  • Roast garlic until golden and fragrant
  • Fold in all of the seafood and saute for 5-6 minutes
  • Add lemon juice, salt and all herbs and spices
  • Add spinach and bell pepper
  • Saute over medium heat until all liquid is gone
  • Add cream, heat through

    Mmmmm...if only my hubby would eat shellfish. Fridays during Lent would be so much more delicious with dinners like this! :( Such is life. I can dream though! Or, on a night he's gone for a meeting I can invite my sisters over for a feast! :) Thanks for sharing! - Natalie
