Curried apple soup

- 4 apples shopping list
- (I've used 'Gravensteiner' - an old variety, golden coloured with a shade of green with light red lines - fruity, peachy, with very just a little acidity.) shopping list
- 2 shallots, chopped shopping list
- 1 clove of garlic shopping list
- 1 piece of fresh ginger, about 2 cm circumference, about a thumb long, grated shopping list
- 2 TBPS butter shopping list
- 2-3 TBSP Currypowder shopping list
- 1 litre chicken broth shopping list
- salt, pepper, shopping list
- nutmeg shopping list
- lemon juice shopping list
- 1 small red chili shopping list
- (or, if you dont like chili, use chives, chopped) shopping list
How to make it
- peel and core apples
- cut into quarters
- slice crosswise
- melt butter in large skillet
- stir in chopped shallots, 'mushed up' garlic, grated ginger
- sprinkle with curry powder
- stir until all is covered with the curry (will be bright yellow)
- add chicken broth
- cook over medium heat for about 15 minutes
- or until apples are very soft
- press soup through strainer or use mixer to puree apples.
- now add pepper, salt, nutmeg and lemon juice to taste.
- you may need to add some more chicken broth depending on the size and texture of the apples.
- now clean the chili, cut in half, then quarters, then slice VERY FINE and decorate the soup with the chili.
- for those who are 'too chicken' to use the chili, decorate with chives. not as much fun, though. :-)

Freezing rain and heavy snow to-day, I only have 2 apples and it's to slippery to go out,so I'm making a 1/2 batch.Sounds like my kind os soup,thanks for sharing.....Bob
