My One-pot dinner

- 1 lb beef cubes shopping list
- 1 medium onion, sliced shopping list
- 1 can cheddar cheese soup shopping list
- 1 4 ounce can sliced mushrooms, save liquid shopping list
- 1 can drained whole potatoes shopping list
- 1 box frozen broccoli or florets or pieces shopping list
How to make it
- In a large skillet, fry beef cubes and onions in oil. I use extra virgin olive oil.
- When beef is browned and onions are cooked (I like my onions with a little "crunch" to them), drain most of the oil.
- Add soup and mix til blended.
- Add potatoes and mushrooms.
- If gravy is thick, add liquid from mushrooms a little at a time.
- Place the frozen package of broccoli on top of the mixture in the skiller.
- Cover and cook til broccoli is cooked through, breaking up the stalks as they cook. About 10-15 minutes.
- Stir everything in the skillet well.
