My One-pot Dinner Recipe
I came up with this recipe when I was living alone; it's fast and easy and has meat, potato and vegetable all in one. The soup makes a great gravy.

Ingredients
  • 1 lb beef cubes
  • 1 medium onion, sliced
  • 1 can Cheddar Cheese soup
  • 1 4 ounce can sliced mushrooms, save liquid
  • 1 can drained whole potatoes
  • 1 box frozen broccoli or florets or pieces

Directions
  1. In a large skillet, fry beef cubes and onions in oil. I use extra virgin olive oil.
  2. When beef is browned and onions are cooked (I like my onions with a little "crunch" to them), drain most of the oil.
  3. Add soup and mix til blended.
  4. Add potatoes and mushrooms.
  5. If gravy is thick, add liquid from mushrooms a little at a time.
  6. Place the frozen package of broccoli on top of the mixture in the skiller.
  7. Cover and cook til broccoli is cooked through, breaking up the stalks as they cook. About 10-15 minutes.
  8. Stir everything in the skillet well.
