Buttermilk Meat Balls Recipe
BUTTERMILK MEAT BALLS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Sparks Estate in Allen, Texas in 1984.

Ingredients
  • 1 pound lean ground beef
  • 3/4 cup milk
  • 3/4 cup fine bread crumbs
  • 1/4 cup finely chopped white onion
  • 1 teaspoon salt
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup butter
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 teaspoons granulated sugar
  • 2 cups buttermilk
  • 2 tablespoon mustard

Directions
  1. Combine beef, milk, bread crumbs, onion, 1 teaspoon salt and pepper.
  2. Mix thoroughly then shape into 16 balls.
  3. Melt 2 tablespoon butter in a skillet then brown meat balls well on all sides.
  4. Remove the meat balls from the pan and add the remaining butter.
  5. Blend in flour, sugar and remaining salt.
  6. Add buttermilk and mustard then cook stirring constantly until thickened.
  7. Reduce heat and return meat balls to sauce then cover and simmer 25 minutes.
  8. Serve over rice or noodles.
