How to make it

  • prepare muffin mix as directed on the package, using milk, butter, and egg
  • stir the chilies into the batter. don't over mix
  • divide the batter evenly among the muffin cups. use paper-cup lined mini-muffin pan ( paper-cup size 1 3/4 x 1 inch )
  • top each with 1/4 teaspoon jelly in the middle of the muffin
  • press jelly lightly into the batter
  • bake at 400' F for 12 to 14 minutes or until golden brown
  • immediately remove from muffin pan.
  • top each muffin with additional 1/4 teasp. jelly
  • serve warm
