Hot Pepper Jelly Muffins

- 1 package ( 6.5 oz.) Betty Crocker golden corn bread & muffin mix*** shopping list
- 1/3 cup milk shopping list
- 2 TBSP. butter, melted shopping list
- 1 egg shopping list
- 2 TBSP. canned green chilies, chopped shopping list
- approx. 3 TBSP. hot pepper or jalapeno pepper jelly shopping list
- ........................................... shopping list
- ****or use your favorite corn muffin recipe shopping list
How to make it
- prepare muffin mix as directed on the package, using milk, butter, and egg
- stir the chilies into the batter. don't over mix
- divide the batter evenly among the muffin cups. use paper-cup lined mini-muffin pan ( paper-cup size 1 3/4 x 1 inch )
- top each with 1/4 teaspoon jelly in the middle of the muffin
- press jelly lightly into the batter
- bake at 400' F for 12 to 14 minutes or until golden brown
- immediately remove from muffin pan.
- top each muffin with additional 1/4 teasp. jelly
- serve warm
