How to make it

  • Soak beans overnight in 4 cups cold water. Drain.
  • Cook beans in 4 cups cold water with 1 tsp. of salt. Bring to a boil and simmer 30 minutes or until tender.
  • In hot olive oil saute garlic, bacon, onion, and celery for 5 minutes.
  • Add cooked beans and water and simmer another 15 minutes.
  • Cook salad macaroni according to package directions; drain.
  • Add cooked salad macaroni, tomatoes, red pepper, oregano, and parsley to beans. Stir and simmer 15 minutes.
  • Serve in soup bowls, topped with Parmesan cheese.

    This does sound good. I am not a big meat eater and many times want a quick one pot vegetarian meal (except for the beacon),thank you for this post.
