Pasta And Beans Recipe

Ingredients
  • 1 C small Red Beans
  • 4 C cold Water
  • 1 tsp. Salt
  • 1/4 C Olive Oil
  • 1 clove Garlic, minced
  • 1/4 pound Bacon, cut up
  • 1/2 C chopped Onion
  • 1 C chopped Celery
  • 1 1/2 C Salad Macaroni
  • 1/2 pound fresh Tomatoes, peeled and cut in chunks
  • 1/4 tsp. crushed Red Pepper (optional), or Black Pepper to taste
  • 1/4 tsp. Oregano
  • 1/2 C chopped Parsley
  • Grated Parmesan cheese

Directions
  1. Soak beans overnight in 4 cups cold water. Drain.
  2. Cook beans in 4 cups cold water with 1 tsp. of salt. Bring to a boil and simmer 30 minutes or until tender.
  3. In hot olive oil saute garlic, bacon, onion, and celery for 5 minutes.
  4. Add cooked beans and water and simmer another 15 minutes.
  5. Cook salad macaroni according to package directions; drain.
  6. Add cooked salad macaroni, tomatoes, red pepper, oregano, and parsley to beans. Stir and simmer 15 minutes.
  7. Serve in soup bowls, topped with Parmesan cheese.

Maybe I'm turning into a vegan (not), but this sounds surprisingly good. Thanks Chichi.


This does sound good. I am not a big meat eater and many times want a quick one pot vegetarian meal (except for the beacon),thank you for this post.
