China Run Curry Recipe
I've had this recipe for years and I never tire of it. A good way to use leftover chicken.

Ingredients
  • 2 onions, minced
  • 6 stalks celery thinly sliced
  • 1 green apple peeled and thinly sliced
  • 4 tbsp butter
  • 4 tspn curry powder
  • 2 cups diced, cooked chicken
  • 1/4 cup raisins
  • 1 cup chicken broth
  • salt to taste
  • 2eggs
  • 1/2 cup cream

Directions
  1. Saute onions, celery and apple in butter til tender.
  2. Blend in curry and cook a little longer.
  3. Add the chicken, raisins, broth and salt and simmer slowly 20 minutes, stirring occasionally.
  4. Just before serving, beat eggs with cream and add.
  5. Serve over rice with condiments on the side (chopped peanuts, chutney and preserved ginger)..

This sounds very good. I have (not posted, yet) a similar recipe with tuna...but it has no cream. Makes me think, though, it could have! Ha.
